I could use a little springtime. How about you?

Looks like we have another few days (WEEKS) of winter, so I'm sharing these cheery Raspberry Lemon Overnight Oats to bring a little brightness in to your day.

With the vibrant pink hue from the raspberries and a tangy little perk from the lemon, this tastes like sunshine and happiness.

The dietitian in me is excited to share that the goodness of these overnight oats goes WAY beyond beauty and deliciousness.

1. Good for Gut Health: This overnight oats recipe includes a gut health dynamic duo: probiotics and prebiotics. The kefir provides you with probiotics -- they're the good bacteria that, when eaten regularly in adequate amounts, may boost health. (The yogurt and kefir are fermented dairy products which are known to boost gut health bacteria too.) Oats and raspberries provide prebiotic fibre; think of prebiotics as the fuel for the good bacteria that helps them to thrive.

Raspberry Lemon Overnight Oats

Makes: 2 servings

Ingredients

1 cup Skyr yogurt (raspberry, cherry, or strawberry)

1 cup raspberries, frozen and slightly thawed, or fresh

1/2 cup quick cook steel cut oats

1/2 cup plain kefir

2 Tbsp chia seeds

4 tsp fresh lemon juice

Optional toppings: raspberries and finely chopped dark chocolate

How to Make

In a medium bowl, stir all ingredients together until well combined, slightly mashing the raspberries.

Spoon into two 1 cup glass jars, cover and refrigerate overnight. When ready to eat, add optional toppings and enjoy.

Tips:

I use quick cooking steel cut oats but you can use large flake oats instead.

I use lower sugar Skyr yogurt but you can use plain if you want even less added sugar.
