Frittata & Quiche: Tasty, Budget-Friendly Comfort Food Meals


I have to admit that in the past I've been guilty of tossing the last little bit of leftovers.


It didn't feel great, but I did it.


But the current COVID19 situation has me feeling hyper aware of food availability and price. I'm fortunate to have this food and I'm not going to waste that. I'm challenging myself to use up every single little bit of leftover food we've got. And I'm actually getting a real kick out of it! It's like I've accomplished something in my day.


Truthfully, some days making a meal is all I do accomplish. This week when I hit the end of the majority of some of my groceries, and trying to find a creative way to use up a few leftovers, quiche came to mind.


Quiche and frittatas are comfort foods (egg-y, cheesy goodness) and they are an easy and tasty way to use up small bits of leftovers.


Got a wee wedge of cheese? Toss it in.

One last piece of leftover meat? Chop it and add it.

A few extra roasted veggies? In they go! Quiche takes a bit more work to make the crust -- a skill I admit that I have not mastered. Frittatas though are super simple. Just


Here are three tasty frittata combos and a simple "how to" guide. Get creative, add in whatever leftovers you've got. Great use for frozen veggies too!


Step 1

Whisk together:

8 eggs

3 cups milk (preferably whole or 2% for a creamier filling)

good pinch of salt and pepper

pinch nutmeg (optional)


Step 2

Add in:

1-2 cups of filling of your choice (leftovers are great!)

1 cup of shredded cheese


Step 3

Pour mixture into a greased 9X13 lightly greased baking dish or cast iron skillet. Bake in 375 degree oven until just set (about 40-45 minutes).

OR

Pour into two pie dishes with pre-baked crust (home-baked or store-bought) and bake in 375 degree oven until just set (about 40-45 minutes).




Five Tasty Filling Combos


1. Cooked turkey + cooked potatoes + green onion + extra old cheddar cheese


2. Roasted broccoli + feta cheese

3. Grated carrot + corn + jalapeno + green onion + cheddar cheese


4. Sauteed mushrooms + sauteed greens (e.g. kale, spinach, swiss chard) + goat cheese


5. Cooked sweet potato + onion + smoked cheddar
