SIMPLE Peanut Butter Energy Bites

Anyone out there remember GORP? Good ole raisins and peanuts? My sister insists is "Gobs" of raisins and peanuts but that just sounds weird. If you follow me on Instagram, you'll know that I’ve got a thing for energy bites.

I keep them in the fridge so I’ve got a quick, energizing snack ready to grab ‘n go when I’m on the run.

If you love peanut butter and crave healthy-ish snacks, this bite is for you. It’s filled with wholesome ingredients and the peanut butter, flax and oats make it a snack that with staying power. A sprinkle of chocolate chips is optional (but I suggest you add them -- it really). Here’s the EASY recipe. Snack on friends!

GORP Energy Bites

Ingredients

1 cup large flake oats 1/2 cup natural peanut butter 1/2 cup golden raisins 1/2 cup chopped roasted salted peanuts 1/4 cup mini chocolate chips 1/4 cup ground flax 1/4 cup honey

How to Make:

Place all ingredients in a medium bowl and stir with wooden spoon until totally combined.

Using tablespoon measure, scoop healing spoonful, roll into balls. (you may need to wet /dampen hands to roll, which is great cause then you can lick your fingers. And then wash hands before rolling more).

Store in the fridge for up to a week. Makes 20 balls.
