Ever pick up a container of big beautiful blueberries and bite into one expecting that burst of blueberry-ness, only to find that they taste like a whole lot of nothing?
That happened to me this week. And I had purchased THREE containers of the little blues because they were on sale for $1.99 -- who could resist!
So...what to do when that berry flavour is a little lack luster? Roast them!!
A little honey and lemon and a quick roasting just until they start to burst brightens the flavour and perks those little blues right up.
Honey Roasted Blueberries are dreamy on creamy cottage cheese, but also great on peanut butter toast, warm oatmeal, pancakes, waffles, or in a Greek yogurt parfait. Seriously, the sky's the limit when it comes to tasty combos.
Word of wisdom: make a big batch. Trust me, you'll want to eat the whole tray!

Honey Roasted Blueberries
2 small containers (170 grams each) blueberries, washed
3 tsp honey
1/2 lemon
Set oven to 350 F. Line a baking sheet with parchment.
Put blueberries on the parchment lined baking sheet. Drizzle with honey. Squeeze the lemon over top to release all the juice.
Put the blueberries in the oven and roast for 8 to 10 minutes (depending on size of the berries), until some are just starting to split open.
Cool and store in the refrigerator (if there are any left -- good luck with that!).
